520 _a The browntop millet (Brachiaria ramosa) is a good source of nutritionally valuable protein, dietaryfiber, minerals and gluten free which helps to solve health problems related to gluten intolerance. In the present study nutritional analysis showed that the moisture, protein, fat,ash,crudefibreandcarbohydratesofbrowntopmilletricewere8.54,13.38,4.18,5.42,4.95and63.53percentrespectively.Totalstarch, amylose,amylopectin,resistantstarch,total dietary fibre and total sugars were 56.87, 14.24, 42.45 1.21, 12.51 and 0.95 g/100g respectively. Total phenols, total flavonoids, tannins, phytates and oxalates were 162.91 mg GAE, 2178.62 mg QE, 2.01 g, 363.24 mg and 4.01 mg/100g respectively. The mineralcontentshowedthatthecalcium,iron,zinc,copperandmanganesewere25.12,6.11,2.21, 1.22 and 0.67 mg per 100g respectively. Nutritional analysis showed that the moisture, protein, fat, ash, crude fibre and carbohydrates of browntop millet based puliogare were 7.42, 14.60, 3.76, 3.38, 7.48 and 63.36 per cent respectively. Nutritional analysis showed that the moisture, protein, fat, ash, crude fibre and carbohydrates of browntop millet khakhra were 5.66, 12.21, 3.53, 4.86, 8.08 and 65.66 per cent respectively. Nutritonal analysis showed that the moisture, protein, fat, ash, crude fibre and carbohydrates of browntop millet ribbons were 1.98, 13.61, 13.17, 1.95, 7.20 and 62.09 per cent respectively. The shelf life of browntop millet rice stored in control (MDPE), vacuum, vacuum with UV, MAP and MAP with UVwas 360 days. The pretreated browntop millet rice was stored successively in control (HDPE) was 150 days and pretreated (HDPE) was 210 days respectively. The browntop millet based puliyogare was stored successfully in control (MDPE), vacuum and vacuum with UV was240 days. The browntop millet khakhra was stored in MDPE, vacuum and vacuum with UV was 180 days. The browntop millet ribbons was stored in MDPE, MAP and MAP with UV was 150 days, the free fatty acid content and microbial load were also within the permissible limit respectively. The initial acceptability index (%) of browntop millet rice in the control was 85.61, which significantly decreased to 60.14 after 360 days of storage. The consumer acceptability of browntop millet based puliyogare, khakhra and ribbons which indicated that approximately 61 per cent of the participants preferred to consume the browntop millet-based puliyogare for every opportunity they had, approximately 70 per cent of the participants preferred to consume the browntop millet khakhra for every opportunity they had and 78 per cent of the participants preferred to consume the browntop millet ribbons whenever possible, while11 percent liked to eat theproduct often if it was available. Thecost of1 kgpuliyogare for control was 292 rupees, vacuum packing 302 rupees and vacuum with UV 307 rupees.The cost of khakhra for control was 176 rupees, vacuum packingwas 186 rupees and vacuum with UV was 191 rupees and ribbons for control was 287 rupees, MAP it was 297 rupees and MAP with UV packing was 302 rupees.
